These Halloween rice krispie treats are so adorable and delicious! They are the perfect quick snack for a party or if you just want something festive to munch on. And they are super easy to make and you only need a handful of ingredients!

Halloween Rice Krispie Treats Recipe

Making these Halloween Krispie treats are simple, but they look like something from a bakery! And who doesn’t love the gooey marshmallows and crispy cereal combination? 

I love arranging these adorable monsters out on the table for parties, or taking them to potlucks, because they are just so cute! They can be customized into fun colors and shapes, and because rice krispie treats are a classic dessert, they are always a favorite!

Ingredients You’ll Need

Rice cereal with other ingredients needed to make rice krispies treats.
  • rice krispie cereal-This crispy rice cereal is the base of the our monster. 
  • mini marshmallows- about 4 cups, unless you need a few extra to snack on while you are making them. You can also use full size marshmallows. 
  • butter- Using real butter gives these treats and extra gooey richness flavor. 
  • green candy melts- Frankenstein can’t be scary without having his green color!
  • jimmies sprinkles
  • Candy eyes- If you can’t find eyeballs, you can use candies or white chocolate chips for his eyes. 
  • Black icing
  • coconut oil (optional)

How to Make Halloween Rice Krispie Treats

STEP 1. Prepare a 9×13 baking dish by rubbing the inside with butter or non stick spray, and then set it aside.

STEP 2. In a large saucepan, melt the butter over low/medium heat. Once it’s melted, add in the mini marshmallows, stirring to combine them with the butter as they melt also. Keep on low/medium heat, until all of the marshmallows are melted. Be careful not to burn the marshmallow mixture.

STEP 3. When the butter and marshmallow mixture has melted and is smooth, remove the saucepan from heat and then add the rice krispie cereal to the pan. Quickly stir until the cereal is evenly coated in the marshmallow butter mixture.

STEP 4. Press the mixture into the prepared baking dish and press down with a rubber spatula. You can spray the spatula with non stick spray to keep it from sticking to the marshmallow.

STEP 5. Allow this to set at room temperature for at least 30 to 60 minutes. Loosen the edges and turn out onto a cutting board or parchment paper. Cut into rectangles, then set aside.

STEP 6. Melt the green candy melts in a microwave in 30 second intervals, or in a double boiler. You can add 1 teaspoon of coconut oil to thin the candy melts out if needed.

STEP 7. Dip the top of each rice krispie into the melted chocolate and then lay it onto a piece of parchment paper. Before the chocolate hardens, add jimmies sprinkles and place the candy eyeballs in desired places.

STEP 8. When the green candy melts have hardened, pipe stitches for mouth with the black icing. Allow to completely set before enjoying. (If you don’t have a piping bag, you can use a toothpick and dip it into the icing to decorate his mouth.)

How to Make Rice Krispie Treats in the Microwave

If you really want to make them yourself and are in a hurry, toss the marshmallows and butter in a large microwave safe bowl. Microwave on high for one to two minutes. The marshmallows will fluff up as they are heated. Then quickly stir in the rice cereal and follow the recipe as above.

Tips for the Best Halloween Rice Krispie Treats

  • Use fresh marshmallows: Older marshmallows don’t melt as well and can make your treats hard and taste stale. And for extra gooey treats, add in an extra handful of marshmallows. 
  • Keep stovetop on low heat: Watch your pot too. The marshmallows can burn quickly if the heat is too high. 
  • Fun Halloween treats in a hurry: Start with a box of pre-made treats from the local grocery store. They are already cut into rectangles and ready to go!

Variations

  • Shape your treats: Twist or mold the mixture into fun shapes before they harden. For shapes like black cats, a pumpkin, or a ghost, use cookie cutters to help shape them. If molding them by hand, you can rub a tiny bit of butter or olive oil on your hands to prevent sticking.  
  • Mummy Rice Krispie treats: Drizzle melted chocolate over your rectangles, leaving a small space at one end for the eyes. Add a small drop of melted chocolate for each candy eyeball to set in.  
  • Add color to the treats: If you prefer to make your treats green, add food coloring to the mixture before it becomes firm. 
  • Change up the flavor: Buy premade treats that are chocolate and strawberry, or use flavored cereal for your base. I’ve also added chocolate chips to my mixture to make them chocolatey.

What can I use if I can’t find black icing?

You can melt chocolate and transfer It to a piping bag, and pipe the stitches on that way!

Notes

When using melting chocolates, it’s important to have everything dry. Even a tiny drop of water can cause the chocolate to seize. 
Watch the melting chocolates in the microwave or on stovetop. It can also burn. 
Depending on how big you cut your treats, you can get 10-12 Frankenstein treats from one batch.
