Easy Apple Pie Overnight Oats Recipe
Although apples are sweet and juicy, they are also nutritious. You can use any type of apple, like granny smith or gala, and then grab your favorite yogurt flavor to make this simple recipe.
I love how fresh and light these overnight oats are after they’ve been soaking in the refrigerator. And of course, they are easy to make in batches so you have quick breakfasts for busy mornings.
I love having these on hand when I want a simple breakfast at home, for holiday mornings or when we have guests staying with us. They are easily stored so when someone wants a snack or breakfast, they can just help themselves.

Ingredients You Will Need
- old-fashioned oats: The base of the overnight oats that soaks up the flavors added to the jar.
- milk: Adds creaminess and helps soften the oats.
- plain Greek yogurt: Adds protein and thickness to the oats, to help you feel full.
- chia seeds: Tiny seeds that add extra nutrition to your oats.
- ground cinnamon: Warm spice that enhances the apple flavors, giving your oats a cinnamon apples and apple pie flavor.
- maple syrup: A natural sweetener that adds flavor to the overnight oats.
- apple, peeled and diced (about one cup): Crisp, juicy bites of sweetness, and the main ingredients, along with oats, for this recipe.
- brown sugar: Gives extra sweetness to the oats, and gives the apples a light caramelized flavor.
- water: Helps soften the apples as they cook.
- Chopped pecans or walnuts for topping: Adds a delicious crunch and nutty flavor.
How to Make Apple Pie Overnight Oats
STEP 1. Add the water to a small pot or saucepan. Place on the stovetop on medium heat. Add the apples, brown sugar, and half of the cinnamon to the pot.
STEP 2. Over medium heat, cook the apples for about 10 minutes, until they soften, occasionally stir the apples as cook. Once they’ve softened, remove from heat and let them cool for a few minutes.
STEP 3. Add the oats, chia seeds, remaining ½ teaspoon of cinnamon, maple syrup, yogurt, and milk to the mason jar. Stir the ingredients together until they are well combined.
STEP 4. Top the yogurt mixture with about half of the cooked apple mixture, then stir together to combine ingredients.
STEP 5. Top the oat mixture with the remaining cooked apples, without mixing together. Then put the lid on the jar and place in the refrigerator overnight.
STEP 6. In the morning, top the oats with chopped pecans, walnuts, or almonds and enjoy!
Overnight Oats Tips
- Make it Vegan: Use unsweetened almond milk, or oat milk and skip the yogurt to make this recipe vegan.
- Add extra flavors and spices: Add a few drops of vanilla extract for extra flavor, or half a teaspoon of apple pie spice or nutmeg, along with the cinnamon to the mixture.
- Meal Prep Jars: Make a big batch for the week, and place them in individual jars. Store in the refrigerator so you can grab and go during the week.
Apple Pie Overnight Oats Variations
- Berry oats-add mixed berries instead of the apple slices.
- Chocolate and Peanut Butter- use chocolate milk or chocolate almond milk, then add a spoonful of creamy peanut butter and mini chocolate chips to the yogurt, then mix together.
- Pumpkin Spice Flavor- use canned pumpkin, pumpkin pie spice, and top with chopped pecans and a dollop of whipped cream.
- Make it Peachy– replace the cooked apples with slices of fresh peaches. Combined with the oats and yogurt, you have a delicious fresh peach oats mixture.
- Dried Fruit- Change up the texture by adding dried cranberries, raisins, or even dried apricots to the jar.

Because they have been sitting in the refrigerator overnight, they are usually cold. You can warm them in the microwave if you prefer.
They can be eaten if they have been chilled for at least six hours. But overnight is best for them to become soft and absorb all of the yummy flavors.
I like to use old fashioned oats, also called rolled oats, for this recipe. If you use quick oats, they can get soggy and steel cut oats need to sit in the fridge longer, and can often be chewy.
If you are making a batch for the week, if they are in an airtight container like a sealed jar, they should be good for 4-5 days. If you are topping with fresh fruits, keep those in separate containers to add just before serving.
