How to Make Meringue Snowmen

- Preheat the oven to 225 degrees F and line a baking sheet with parchment paper. Add the large egg whites and cream of tartar to a clean large bowl.

- Using a stand mixer or electric mixer fitted with a whisk attachment, beat on medium speed until foamy. Increase to high speed and add the sugar slowly, 1/2 cup at a time. Beat until soft peaks form. Rub a little between your fingers. If it feels gritty, keep beating until smooth.

- Transfer the meringue to a large piping bag fitted with a round tip. Pipe a golf ball-sized mound onto the prepared baking sheet, then pipe a grape-sized mound directly on top to create the snowman’s head. Repeat with the remaining meringue.

- Bake the meringues for 60 to 90 minutes, depending on their size. You’ll know they’re ready when you can easily peel a meringue away from the parchment paper. Turn off the oven and leave the meringues inside until completely cooled, about 2 hours.

- When meringues have cooled, melt white chocolate in a microwave safe bowl, stirring in 30 second increments. Once it’s melted and smooth, divide in half. Add green food coloring to one bowl and orange food coloring to the other. Use the orange chocolate to pipe on the noses and the green chocolate to make the scarves. Use the melted dark chocolate to add the eyes, mouths, buttons, and arms. Allow the chocolate to set before serving or storing.
