These adorable Meringue Snowmen are such a fun Christmas treat! They’re almost too cute to eat, but they’re also surprisingly simple to make. These would be so fun on a Christmas dessert tray, for a holiday party, or even tucked into treat boxes for friends and neighbors.

Ingredients

Ingredients needed to make snowman meringues measured into small bowls and labeled on a marble table.
  • egg whites, room temperature
  • cream of tartar
  • granulated sugar
  • melted white chocolate: This will be colored to make the snowmen’s noses and scarves. (You can also use orange and green candy melts, then skip the food coloring.)
  • melted dark chocolate: Used to make the eyes, mouths, buttons, and arms.
  • Oil-based green food coloring: Colors part of the melted white chocolate for the scarves.
  • Oil-based orange food coloring: Colors part of the melted white chocolate for the noses.

Variations

  • Change colors: You can easily change the colors of the scarves to match your Christmas decorations. Red, blue, or even a combination of colors would be adorable.
  • Make fun faces: You can also give each snowman a slightly different expression. That’s part of what makes them so cute!

How to Make Meringue Snowmen

  1. Preheat the oven to 225 degrees F and line a baking sheet with parchment paper. Add the large egg whites and cream of tartar to a clean large bowl.

  1. Using a stand mixer or electric mixer fitted with a whisk attachment, beat on medium speed until foamy. Increase to high speed and add the sugar slowly, 1/2 cup at a time. Beat until soft peaks form. Rub a little between your fingers. If it feels gritty, keep beating until smooth.

  1. Transfer the meringue to a large piping bag fitted with a round tip. Pipe a golf ball-sized mound onto the prepared baking sheet, then pipe a grape-sized mound directly on top to create the snowman’s head. Repeat with the remaining meringue.

  1. Bake the meringues for 60 to 90 minutes, depending on their size. You’ll know they’re ready when you can easily peel a meringue away from the parchment paper. Turn off the oven and leave the meringues inside until completely cooled, about 2 hours.

  1. When meringues have cooled, melt white chocolate in a microwave safe bowl, stirring in 30 second increments. Once it’s melted and smooth, divide in half. Add green food coloring to one bowl and orange food coloring to the other. Use the orange chocolate to pipe on the noses and the green chocolate to make the scarves. Use the melted dark chocolate to add the eyes, mouths, buttons, and arms. Allow the chocolate to set before serving or storing.

Tips for the Best Meringue Snowmen

  • Clean your bowl: Even a small amount of grease can interfere with the egg whites, so don’t skip wiping the bowl and whisk with vinegar.
  • Check the sugar: Rub a little of the egg white mixture between your fingers. It should feel completely smooth.
  • Look for stiff peaks: Your meringue should be glossy and hold its shape when you lift the whisk.
  • Keep the sizes consistent: Try to pipe the snowmen about the same size so they bake evenly.
  • Let them cool slowly: Leaving the meringues in the turned-off oven helps them finish drying without a sudden temperature change.
  • Use oil-based coloring: Because you’re coloring melted chocolate, oil-based food coloring works best. Skip coloring if using orange and green candy melts.
