This Spam Fried Rice recipe is a family favorite! It’s quick, flavorful, and a fantastic way to turn simple ingredients into a hearty, satisfying dish.

Spam fried rice is the ultimate comfort food, combining crispy bites of Spam, fluffy rice, eggs, and of course, vegetables. The soy sauce, along with a pinch of brown sugar, adds just the right amount of sweet and savory, making every bite AMAZING! 

I love how easy this recipe is to make when I need a quick weeknight dinner or weekend lunch. It’s a great recipe for meal prepping too! Just divide it into containers and you easily have a week’s worth of lunches or dinners.

How to Make Spam Fried Rice

  1. In a large skillet over low heat, melt the butter. (You can also skip the butter and just lightly spray the pan with nonstick spray or brush with olive oil.) Add the whisked eggs and scramble for about 2 minutes until cooked through. Remove the eggs from the skillet and set aside.

  1. Turn the heat to medium high and add the vegetable oil. Fry the diced Spam for about 5 minutes, stirring occasionally, until crispy and golden brown on the edges. (It will continue to crisp even after you’ve stopped frying them.)

  1. Add the frozen peas and carrots and minced garlic to the skillet. Stir constantly for about 1 minute until the vegetables soften and the garlic becomes fragrant.

  1. Carefully add the cooked rice to the skillet, then toss with the Spam and vegetables, adding in the eggs, soy sauce and brown sugar, until mixed together. Garnish with sliced green onions, if desired, and serve warm.

  • Use leftover rice: Day old rice works best as it’s drier and less likely to clump.
  • Get the Spam crispy: Frying the Spam until it’s golden brown, adds great texture and flavor.
  • Adjust to taste: Add more soy sauce for a slightly more salty flavor, or brown sugar for extra sweetness, based on your flavor preference.

Ingredients 

  • 1 tablespoon salted butter, or olive oil
  • 2 large eggs, whisked
  • 1 can spam, 12 ounces, cut into cubes
  • 1 cup frozen peas and carrots
  • 2 teaspoons garlic, minced
  • 2 tablespoon soy sauce
  • 2 teaspoons light brown sugar
  • 3 cups long grain white rice, cooked- 1 cup rice + 2 cups water= 3 cups

Optional Garnish: Chopped green onions or a sprinkle of sesame seeds
