This Dorito Casserole is made with layers of meat, taco seasoning, Nacho Cheese Doritos, and lots of cheese. It’s packed with flavor, super easy to throw together, and always a hit with family and friends. This delicious casserole recipe is so easy to make! Every layer has melty cheese, a delicious sauce, and after adding in the taco seasoning, the flavors explode! Swap this exciting casserole for a boring taco Tuesday!

For busy weeknights, or a last minute potluck, use leftover chicken, or substitute beef for ground turkey or ground chicken. Either way, this tasty dinner is going to be a family favorite!

Ingredients You Will Need

  • lean ground beef– Use ground turkey or shredded rotisserie chicken instead of ground beef. 
  • taco seasoning– store-bought taco seasoning or make your own!
  • yellow onion, chopped
  • sour cream
  • Rotel diced tomatoes and green chilies
  • Nacho Cheese Flavor Doritos-or regular tortilla chips or flavored tortilla chips
  • shredded cheddar cheese or Fiesta Blend or Mexican Cheese Blend

Variations

  • Make it spicy: To increase the level of spice, try the different levels of tomatoes with chilies. For an ever higher spice lever, use Rotel diced tomatoes with habaneros.
  • Add extra fillings: Make it even MORE filling by adding canned beans (refried bean or black beans) jalapenos, or a can kernel corn.
  • Switch up the flavors of chips: Try different flavors of tortilla chips. Cool Ranch Doritos, or Flamin’ Hot Doritos are
  • Change cheese flavors: I like to use the Mexican Cheese Blend, but you can also just use cheddar, pepper jack cheese, or a mix of your favorite flavors.
  • Swap the protein: Use ground turkey or rotisserie chicken for a lighter or quicker option.
  • Make it vegetarian: Skip the meat and add beans, extra cheese, and veggies instead.

How to Make Dorito Casserole with Ground Beef

Preheat the oven to 375 degrees F, then lightly coat a 9×13 inch casserole dish with cooking spray, and set aside.

  1. In a large skillet, on medium to high heat, brown the ground beef until cooked, with almost no remaining pink in the meat. Drain grease from meat. Lower temperature to medium heat, then add the water and taco seasoning, stirring to combine. Let mixture come to a light simmer until most water has evaporated and meat is evenly seasoned.

  1. Remove the seasoned ground beef from heat, then stir in the onion, diced tomatoes, and sour cream. Stir ingredients together.

  1. Crush chips into pieces about the size of corn flakes. Evenly scatter ½ of the crumbled chips into the prepared baking dish. Top the chips with half of the meat mixture, then top with 1 cup of the pre-shredded cheese.

  1. Repeat the same layers, beginning with remaining crushed chips, then ground beef mixture, then the last cup of cheese. Cover the dish with foil and bake at 375 degrees F for 20-25 minutes. Remove the aluminum foil, for an additional 5-7 minutes cooking time. Bake until cheese is completely melted.

Expert Tips

  • Lean Beef: When making this recipe, I prefer to use lean ground beef. Most of the time, I don’t have to drain a lot of grease, which will also help keep the chips crisp.
  • Crush the Chips: Do not over crush the chips! If you crumble them too small, the chips in the casserole can become a little soggy.
  • Add toppings before serving: Sour cream, black olives, diced tomatoes, or green onions take it to the next level.
  • Make it ahead. Assemble earlier in the day and pop it in the oven when you’re ready.
  • Cover with foil. It helps melt the cheese without drying out the chips too quickly.

FAQ’S

How do I store leftover dorito casserole?

Once the casserole has cooled, store leftovers in an airtight container. Keep refrigerates, and it should be good for 2-4 days. The chips do become slightly soggy if stored longer. To reheat the casserole, place it in the microwave for 2-4 minutes, or return the oven and bake at 375 degrees until reheated in the center. 

Can I use Cool Ranch Doritos instead?

Yes! It changes the flavor slightly, but it’s still delicious. Feel free to experiment with other flavors too.

Can I make this dorito casserole ahead of time?

Absolutely. Assemble it up to 24 hours in advance and store it in the fridge. Just bake it when you’re ready to eat.

Ingredients

  • 1 small yellow onion
  • 1 cup sour cream
  • 1 can diced tomatoes with green chilies, 10 ounce can, like Rotel
  • 1 bag Nacho Cheese Flavor Doritos, 9.25 ounces
  • 2 cups shredded cheddar cheese
