Variations

  • Skip the pumpkin puree: You can leave out the pumpkin puree and still get plenty of fall flavor from the pumpkin pie spice. You can also add a little homemade vanilla extract for extra flavor.
  • Use cinnamon: If you don’t have pumpkin pie spice, ground cinnamon will work, too. You can also use a combination of cinnamon and pumpkin pie spice.
  • Try pumpkin marshmallows: If you find pumpkin-flavored marshmallows, try using them for the filling for even more pumpkin flavor. I recommend sticking with regular marshmallows for the crust so it keeps its lighter color.
  • Change the color: Start with 2 drops of orange gel food coloring and add another drop if you’d like a brighter orange filling.

How to Make Pumpkin Pie Rice Krispies Treats

  1. Melt 2 tablespoons of butter in a large pot over medium heat. Add 2 cups of mini marshmallows and stir until completely melted.

  1. Remove the pot from the heat and gently fold in 2 cups of Rice Krispies cereal until evenly coated with the marshmallow mixture.

  1. Lightly spray a 9-inch pie plate with cooking spray. Add the cereal mixture and carefully press it around the outer edge of the pie plate to form the crust. Set aside.

  1. Melt 3 tablespoons of butter in the same pot over medium heat. Stir in the pumpkin puree and pumpkin pie spice until combined.

Tips

  • Grease your hands: This mixture is sticky! Lightly spray your hands or disposable gloves with cooking spray before pressing the cereal into the pie plate.
  • Work while it’s warm: Shape the crust and filling while the mixtures are still warm. They’ll become harder to work with as they cool.
  • Don’t press too firmly: You want the cereal mixture to hold its shape, but pressing it down too tightly can make the treats hard.
  • Spray your measuring cups: A light coating of cooking spray can make measuring sticky marshmallows much easier.
  • Serve them fresh: Rice Krispies treats become firmer the longer they sit, so they’re especially good while they’re still fresh and gooey.

FAQs

Can I make these without pumpkin puree?

Yes. You can leave out the pumpkin puree and still make the filling with pumpkin pie spice. You can also add a little vanilla extract for extra flavor.

Do these taste like pumpkin pie?

They have a light pumpkin spice flavor, but they still taste like the classic marshmallow Rice Krispies treats everyone loves. The pumpkin puree and spice give them just enough fall flavor.

Why did my Rice Krispies treats turn out hard?

Storage

For the Pie Crust

  • 2 Tablespoons butter
