Ingredients You Will Need

  • Raw shrimp (2 pounds)- Peeled, deveined, tail-off, and thawed
  • Unsalted butter (½ cup)- Melted for a rich, velvety base
  • Olive oil (3 tablespoons)- Adds depth and helps coat the shrimp
  • Cloves Garlic (3-4 cloves)- Freshly minced for bold flavor
  • Sherry wine (¼ cup)- Adds a subtle sweetness (or use dry white wine)
  • Lemon juice (½ cup)- For bright, citrusy zing. You can also add a teaspoon of lemon zest to the sauce for extra flavor. 
  • Plain breadcrumbs (½ cup)- For a golden, crunchy topping
  • Parmesan cheese (½ cup)- Grated for savory, salty goodness
  • Fresh parsley (1 tablespoon)- Chopped, for garnish

Variations

  • Substitutions: If you want to skip the Sherry, you can use a white wine or chicken broth.
  • Make it spicy: For a little extra heat, sprinkle red pepper flakes on top.
  • Gluten free option: Simply use gluten free breadcrumbs or parmesan cheese for a coating, to make it a simple gluten free dinner.

How to Cook Baked Shrimp Scampi

STEP 1: Preheat your oven to 375 degrees F, then lightly grease a 9×13-inch baking or casserole dish.

STEP 2: Once the shrimp has thawed, place them in the baking dish and then spread evenly, and in a single layer.

STEP 3: In a medium bowl, whisk together melted butter, olive oil, garlic, sherry, and lemon juice. Pour this mixture over the shrimp.

STEP 4: In a small bowl, mix the breadcrumbs and Parmesan cheese, then sprinkle mixture evenly over the shrimp.

Tips 

  • Use raw shrimp: Precooked shrimp can become rubbery when it’s baked again. Use uncooked shrimp. If using frozen shrimp, just let it thaw before using.
  • Don’t overbake: Remove from the oven once shrimp are pink and opaque.
  • Serve fresh: This shrimp scampi is best right out of the oven. If you have leftovers, store them in the fridge in an airtight container for up to 3 days.

FAQ’S

Can I use precooked shrimp?

It’s not recommended. Precooked shrimp will become tough and rubbery when baked again. Stick to raw shrimp that is already peeled for the easiest and best results.

What kind of pasta goes best with shrimp scampi?

Linguine is my favorite, but angel hair, or spaghetti, all make delicious pasta. 

Can I prep this ahead of time?

You can prep the butter mixture and breadcrumb topping ahead, but don’t add it to the shrimp until you’re ready to bake. You can also cook pasta or rice early and just set aside in the refrigerator until shrimp is cooked.
