I love making these adorable Hamburger Cookies! They are a fun no bake treat and are super easy to make, perfect for parties, and are always a hit with both kids and adults. These cookies look just like mini cheeseburgers, but they’re made with sweet layers of vanilla wafers, fudge mint cookies, icing, and coconut “lettuce.”

This recipe is such a fun way to get creative in the kitchen. Each “burger” cookie is made with a few pantry friendly ingredients and takes just minutes to assemble. They’re perfect for BBQs, birthday parties, summer picnics, or any celebration that could use a sweet little bite size cookie.

Ingredients You Will Need

  • Nilla Wafers – These make the perfect top and bottom buns.
  • Keebler Fudge Mint Delights – Used as the burger patties.
  • shredded coconut – Dyed green to look like lettuce.
  • Green food coloring – Just a few drops tint the coconut.
  • yellow decorating icing – For mustard.
  • red decorating icing – For ketchup.
  • sesame seeds – Sprinkled on top to complete the burger look.
  • honey – Used to stick the sesame seeds to the top bun.

Recipe Variations

  • Make them cheeseburgers – Add a thin square of yellow fondant or orange icing for the “cheese.”
  • Change the hamburger patty – Swap fudge mint cookies for a York Peppermint Patty cookie, peanut butter patties, or even Oreos.
  • Skip the coconut – Use piped green frosting instead if preferred.

How to Make Mini Burger Cookies

  1. Place shredded coconut in a small bowl. Add a few drops of green food coloring and stir with a fork until evenly coated. Lay one vanilla wafer cookie flat side up on a plate. Add a small dab of yellow or red icing to the center to hold the patty in place.

  1. Press one fudge mint cookie on top of the icing. Pipe a ring of yellow and red icing on top of the cookie to resemble mustard and ketchup.

  1. Sprinkle about ½ teaspoon of green coconut on top of the icing. Add a second vanilla wafer on top, flat side down, to complete the burger.

  1. Brush the top burger bun with a little honey and then sprinkle sesame seeds over it. Repeat the process for the remaining cookies and serve!

Ingredients 

  • 20 Nilla Wafer Cookies
  • 10 Keebler Fudge Mint Cookies
  • 1/2 cup shredded coconut
